This is actually my favorite ever recipe for cutter cookies! They are so soft and light and altogether wonderful! The hints of spice in them give them that perfect lil happy holiday zing, ya know? Whether they are for you or for someone else–they are truly scrumptious (and yummy with icing but can definitely hold their own!)
Another upside to this recipe is that they whip up fast! No chilling required and their bake time is a little over 5 minutes! They hold their shape well around the sides and the tops–so they couldn’t be better for decorating!
Our fun with these cutter cookies…
Yesterday, I decided on a whim to bake cookies for us to decorate! If you read My December Bucket List then you’ll know that decorating cutter cookies was one of the things I wanted to do this season! So we can officially check this off of our list.
It was kind of a busy day so I was thankful that this recipe whips up so quick so we could bake, decorate, and have them eaten within the hour 😉 Needless to say, we had a lot of fun and have the best snack awaiting us this afternoon hehe.
Sugar & Spice Cutter Cookies
Ingredients
- 1 cup butter (softened but not super soft!)
- 3/4 cup granulated sugar
- 1/4 cup cup light brown sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 3 cups all purpose flour
- 1 egg
- 2 tsp baking powder
Instructions
- Preheat oven to 350° F
- Cream butter and sugar until smooth. About 2-3 minutes.
- Beat in vanilla and egg
- In a separate bowl, combine spices, salt, flour, and baking powder.
- Slowly incorporate the dry mixture into the cream mixture. Mix until dough is a play dough texture. (If you find dough is still crumbly, you may need to work the dough with wet hands instead of the mixer.)
- Don't chill the dough. Roll out and cut into 1/4 inches (they are better on the thicker side rather than thinner)
- Bake for 6-8 minutes only. They may not look done but will continue to set as they cool!
