We are some granola bar eatin’ people around this house. We love them! They’re super easy for me when I need a quick/mess free snack while holding baby in the other arm, or for Chance to grab on his way out the door for work!
I’ve been wanting to try to make homemade ones for a while actually. The other day we ran out, and instead of grabbing more at the grocery store, I grabbed ingredients. With being hunkered down at home amidst this COVID-19 business, it seemed like just as good a time as any to give ’em a try!
I gotta say, they turned out soo yummy! I definitely see myself making them again and again, and with a variety of what I add to them. Meanwhile, here’s the recipe for you to see for yourself just how scrumptious these puppies are!
Here’s some things to know before you get started!
- Make sure you use Quick Oats! They will not turn out the same if you use old fashioned oats or rolled oats.
- Getting the boiled sugar mixture (honey, sugar, butter) right is super important! If you don’t boil it long enough, your granola bars won’t stick together. If you over boil it, they’ll be too hard to eat. So make sure you pay careful attention to this step!
- Don’t make them too thin! Try to keep them at the 3/4″ mark. Any thinner and they might fall apart on you. You can, however, make them chunky!
- You can get creative! I used chocolate chips and mixed nuts in this recipe, but you could also use Rice Krispy Cereal, dried berries, white chocolate chips, coconut flakes, chia seeds, etc.
No Bake Chewy Granola Bars
Notes
I used Mixed nuts in this recipe and chopped them with a food processor. You can use whatever nuts you would like and at the size you prefer. (You may also leave them out entirely)
Ingredients
- 1/4 cup Honey
- 4 tbsp Butter
- 1/3 cup Packed Brown Sugar
- 2 cups Quick Oats
- * 1/2 cup Chopped Nuts
- Chocolate Chips
- 1/2 tsp Vanilla
Instructions
- In a large bowl mix oats and chopped nuts. Set aside.
- In a small pot, melt butter, honey and brown sugar together over medium-high heat until it comes to a bubble. Allow to boil for 45 seconds to 1 minute. Reduce the heat and cook 1-2 minutes. Pour in vanilla and stir. Remove from heat and pour over dry ingredients.
- Mix well, making sure all ingredients are wet
- Line jelly roll pan with parchment paper
- Pour mixture into pan and press to be about 3/4″ thick. (If your pan is too large, pack into one side) Make sure to press firmly so everything sticks together well.
- (optional) Sprinkle with chocolate chips
- Cool on countertop for 2 hours before cutting bars.
