The month of hearts and chocolate is upon us. So what better way to celebrate than with brownies? And heart shaped ones with heart sprinkles at that?! These little cuties are inspired by the Little Debbie “Cosmic Brownies”. A fudgey brownie wedge, a layer of chocolate ganache icing, and sprinkles of course!
You can cut these in the traditional square shape, but for the sake of Valentine’s Day, I cut ours into heart shapes using a heart cookie cutter after baking/refrigerating! You also can use mini m&m’s or rainbow sprinkles–honestly, whatever sprinkles you’d like! Once again, I kept it festive and used teenie heart shapes!
Now, for the moment you’ve all been waiting for! The recipe….
Iced Brownies
Ingredients
- 1 cup Melted Butter (slightly cooled)
- 1 3/4 cup Granulated Sugar
- 1/2 cup Packed Light Brown Sugar
- 3 Large Eggs (room temp)
- 1 Egg Yolk (room temp)
- 1 tsp Vanilla Extract
- 1 Cup Unsweetened Cocoa Powder
- 1 Cup All Purpose Flour
- 1/2 tsp Salt
Chocolate Ganache Icing
- 8 oz Semi Sweet Chocolate Chips
- 1/2 Cup Heavy Whipping Cream
- 1 tbsp Light Corn Syrup (this makes the icing shiny!)
Instructions
- Preheat Oven to 350°F
- Line a 9×13-inch baking pan with foil or parchment paper, (leave enough to come above brownies/pan for easy removal)
- In a large mixing bowl, whisk together melted butter and sugars until combined. Whisk in the eggs, egg yolk, and vanilla extract.
- In separate bowl, mix cocoa powder, flour, and salt. Incorporate this dry mixture into wet mixture until just combined.
- Pour batter into pan and even batter out across pan. Bake for 25 minutes or until a toothpick inserted into the center comes out clean. (A few moist crumbs are allowed!) Remove from the oven and allow to cool completely.
To Make Icing
- Add the Corn Syrup to the Chocolate Chips
- Microwave Heavy Whipping Cream for about 1 minute
- Pour over Chocolate Chips and stir and fold until mixture is smooth and entirely combined. (If your mixture is still clumpy, microwave for a few seconds and stir again.
- Spread icing out over evenly across brownies. Sprinkled desired candies on top and refrigerate for 1-2 hours until ganache is cooled and set.
- Cut, serve, and enjoy!
