Ingredients

  • 1 cup butter (softened but not super soft!)
  • 3/4 cup granulated sugar
  • 1/4 cup cup light brown sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3 cups all purpose flour
  • 1 egg
  • 2 tsp baking powder

Instructions

  • Preheat oven to 350° F
  • Cream butter and sugar until smooth. About 2-3 minutes.
  • Beat in vanilla and egg
  • In a separate bowl, combine spices, salt, flour, and baking powder.
  • Slowly incorporate the dry mixture into the cream mixture. Mix until dough is a play dough texture. (If you find dough is still crumbly, you may need to work the dough with wet hands instead of the mixer.)
  • Don't chill the dough. Roll out and cut into 1/4 inches (they are better on the thicker side rather than thinner)
  • Bake for 6-8 minutes only. They may not look done but will continue to set as they cool!
